Minnesota's fruit season is fairly short; we will feature seasonal specialty fruit year round at its peak flavor, but will also include every day fruits in every package.
This week’s produce shares include fennel bulbs with fronds attached and dill still on its stalks. Fennel fronds are the leafy greens attached to the stalks and can be used to make something delicious. The stalks are a fantastic addition to stocks or to whatever liquid you are using to steam or poach seafood and veggies to give it a hint of fennel flavor.
Fennel fronds taste very similar to the bulb. The fronds can be pulled right off the stalk and used like any tender herb. Toss them into dishes that include the fennel bulb, mix them into pestos, salsas, stocks, vinaigrettes, yogurt dips and on top of veggies.
Dill leaves play well with fennel, cucumbers, tomatoes, dairy, fish and potatoes. The small tender stems can be chopped up along with the leaves. Thicker stems can be added to pickle jars, stuffed into fish, and used like bay xleaves to flavor soups, stews and cooking water.
We love vegetarian meals. Rice isn’t something we should eat all the time for a wide range of reasons, but there nothing like a REAL risotto with Arborio rice. Strictly speaking this dish isn’t vegetarian since a homemade broth is essential to the flavor. The broth also adds electrolytes and helps cushion the onslaught of carbs the rice throws at us. This meal takes time to do it right, but it is easy. Just get a glass of wine and have a nice conversation.
