Thai Inspired Cucumber Salad

  • 1 lb cucumbers, pealed and thinly sliced
  • Kosher salt
  • ¼ cup salted, roasted peanuts or cashews
  • ¼ cup cilantro leaves
  • 1 tsp red-pepper flakes
  • 3 Tbsp peanut butter (preferably natural, unsalted)
  • 2 Tbsp soy sauce
  • 2 Tbsp unseasoned rice vinegar
  • 1 tsp granulated sugar
  • 1 small garlic clove, grated
  • Chile oil, for serving (optional)


  1. Toss cucumber slice with 1/2 tsp salt in a colander. Set aside to drain.
  2. Chop peanuts, cilantro and red-pepper flakes together.
  3. In a large bowl whisk together peanut butter, soy sauce, rice vinegar, sugar, garlic and 1/2 tsp salt. Add salted cucumbers to the bowl and toss with dressing.
  4. Serve topped with peanut and cilantro mixture. Drizzle with chili oil, if using.
