Braised Beet Greens

  • 1 Bunch beet greens
  • 1-2 Cloves garlic (minced)
  • 1-2 Shallots or onion (chopped)
  • 2 tbs Olive oil
  • Salt and pepper


  1. Thoroughly wash beet leaves and stems to remove any sand or dirt that is still clinging to the ridges of the stems.
  2. Like prepping kale, cut the stem and thick part of the center rib from the leaves. Chop the leaves and stems separately.
  3. Add a tablespoon or two of olive oil to a large skillet. Sautee garlic, shallots, or onion over medium heat, with the lid, until softened.
  4. Add stems and 1/3 cup water plus salt to taste. Cover and braise the stems until tender, about 4-6 minutes.
  5. Add chopped leaves and simmer, stirring occasionally, until the leaves are tender for 3-4 minutes.
  6. Season with salt and pepper to taste and serve!
