Sautéed Baby Bok Choy

Ingredients
1 lb bok choy
1/4 cup
water
1 lb
bok choy
1 tbsp
sesame or vegetable oil
1 clove minced
garlic
Splash of
soy sauce
Directions
Rinse bok choy, pat dry.
In a medium skillet bring water to a boil and add whole or halved bok choy depending on its size.
Cover and simmer over medium low heat for about 5 minutes.
Uncover and cook on high heat until the pan is dry.
Add oil and garlic, tossing often until the garlic is fragrant. Add a splash of soy sauce and ground pepper to taste.
