Summer Vegetable Stew

This is very quick to prepare but cooks for an hour, so be sure to start well before dinner. Serve over rice or with crusty bread with cheese.

Pesto Pasta with Grilled Chicken

We love this pesto! Make multiple batches at once and freeze the extras for later use.

For this dish, prepare the pesto, boil the pasta of your choice, and grill some chicken breasts. Mix the pesto and pasta, top with sliced chicken, and finish with grated parmesan.

Kale & Chickpea Curry

We. Love. This. Dish. We make it more in winter months but it's great for summer as well. Serve over rice.

We'll be making a double batch this week and freezing individual portions for later.
