For a kid who’s favorite color is green and given the choice will always choose a green shelled egg to eat for breakfast, she sure doesn’t like spinach, kale or any green veggie in her eggs. She’d say ‘no geeeeen’ and either pick it out or insist on getting another egg that was ‘orange’.
She seemed to be on a fruit kick, and we wanted to find ways to incorporate more veggies into her diet. One specific goal was to get enough folate (vitamin B9).
It sounds like some studies suggest the synthetic version (Folic acid) is not as effective and can increase cancer rises. If you are taking a supplement (and most of us probably should), consider getting get one that says ‘folate – as metfolin’ or more scientifically listed as "L-5-methyltetrahydrofolate".
Avoid ingredients called ‘folic acid’. Here is why:
Many people are not able to convert the synthetic folic acid into Vitamin B9. Taking folic acid in these cases can actual make things worse.... and taking too much folic acid can also be a big problem.
A more natural supplement of a fully bio-available B9 (Metfolin) appears to be more effective without the added risks of folic acid. Or just eat these amazing green eggs or the many other items listed below.
Here is a link to a good brand that has the Vitamin B9 as L-5-methyltetrahydrofolate (the best type). I highly recommend taking this form if you are looking to get pregnant.
Then we just had to convince ourselves it isn’t gross to eat green eggs... They tasted great, but needed something, so Betsy made up an awesome dressing, the combination is really quite good.
Combine:
I like to put them in a small tupperware and shake vigorously to mix. Use high quality ingredients – you’ll taste the difference!
