There is nothing like local heirloom carrots. We just love when we get them in our veggie CSA. They are fantastic raw, but add a bit of honey and ginger and you get something quite special for the few minutes of your time.
Ingredients
- A dozen organic carrots, chopped
- Coconut oil
- 1" of ginger, finely chopped
- 1 T raw honey
Instructions
- Heat some oil in the pan over medium heat
- Add carrots and ginger
- Cook for 10 min or so until carrots are desired tenderness, you can cover if you'd like. It is nice if they can brown a bit, but not burn.
- Mix in honey
- Enjoy!
