Breakfast Burritos

We used to make breakfast burritos all the time. At some point we fell for the marketing gimmicks and used to think that somehow those fake sausage soy crumbles were good for us or the factory pork sausages, so we’d use those. Now of course we realize that was a bad idea for a million reasons.

Instead, here’s a great way to nourish your body with a tasty treat!


  • TC farm Italian sausage (would also work with breakfast sausages or bacon)
  • TC farm eggs
  • Rice and/or tortilla
  • Optional ingredients: salsa, avocado, roasted potatoes, cheese, sour cream, chipotle powder, cilantro, chives, tomato...


Sauté the sausage and cook the eggs how you’d prefer – we usually scrambled them for this meal. I really like when the tortilla is actually steamed… so when I have time, I use the water I am already boiling for coffee and I put the tortilla on top of the saucepan until softened. Wrap everything up and enjoy!
