Mushroom Squash Risotto

Posted by Josh King | Tags: sides, recipes, soup, mushroom, 02-08-2022, 03-29-2022

We love vegetarian meals. Rice isn’t something we should eat all the time for a wide range of reasons, but there nothing like a REAL risotto with Arborio rice. Strictly speaking this dish isn’t vegetarian since a homemade broth is essential to the flavor. The broth also adds electrolytes and helps cushion the onslaught of carbs the rice throws at us. This meal takes time to do it right, but it is easy. Just get a glass of wine and have a nice conversation.

Chicken and Coconut Soup

Posted by Josh King | Tags: shredded chicken, easy, whole chicken, soup, recipes

We love this recipe. It is very flavorful but SO quick and easy to make. Start the chicken in the morning before work (or the day before if that’s easier) and the rest can be done in about 20 minutes right before dinner.

Bratwurst and Sausage Egg Bake

Posted by Josh King | Tags: brats, eggs, recipes, sausages

This is a yummy one-dish meal modeled after the British dish Toad-in-a-Hole. We love it with our brats and eggs!

Thai Peanut Pasta with Ground Pork

Posted by Josh King | Tags: ground pork, pork, vegitarian, recipes, 03-15-2022

This has been a favorite recipe of ours for a good 10 years … but we never realized until now that it would be PERFECT with ground pork! We’ve always made it with chicken or as a vegetarian dish but with the pork it has just now reached its full potential. This is a quick and easy weeknight meal – enjoy!

Avocado chocolate (vegan) pudding extravaganza

Posted by Jack McCann | Tags: dessert, recipes, vegan, vegetarian, sugar-free, 03-29-2022, 04-19-2022

Not a fan of soy-burgers -- but you gotta love cooking vegan if for no other reason than this pudding. I've tried various internet recipes and none of them were that good -- but THIS is fantastic. A healthy, sugar 'free' treat for all.

Pepperoni and Pea Pasta

Posted by Josh King | Tags: pepperoni, recipes, delimeat, 03-22-2022

We don’t generally have extra pepperoni to use for anything besides pizza, but we thought we should probably find another option for anyone looking to be more creative than we are! This recipe is quick to cook and uses ingredients that we generally have in the house. We don’t eat pasta often so when we do we want to make sure it is something really good!

Breakfast Burritos

Posted by Josh King | Tags: breakfast, recipes, eggs, sausage

We used to make breakfast burritos all the time. At some point we fell for the marketing gimmicks and used to think that somehow those fake sausage soy crumbles were good for us, so we’d use those. Now of course we realize that soy is pretty damaging to our bodies and that factory made sausages are deficient in key vitamins, full of crazy artificial or ‘natural’ toxic flavors and thus we wouldn’t touch the stuff. Instead, here’s a great way to nourish your body with a tasty treat!

Tamale Pie

Posted by Josh King | Tags: recipes, ground beef, beef

We loved when we used to have time to make tamales. Our cousin, Andy, got us into it with a really complicated recipe that took about 20 hours to make a meal for four people. Those were the days. No time? No Corn husks? It’s a perfect time for Tamale Pie! This recipe makes a lot of food, we put half or more of it away for a future quick meal.

Preparing Perfect Pastured Pork Chops

Posted by Jack McCann | Tags: article, newsletter, handbook, pork, recipes, pork chop, sous vide

We've learned a lot over the years on how to prepare tender juicy pork -- not that dry cardboard stuff you might remember. A well prepared organic pork chop can rival any steak, give it a shot!

Penne in Cream Sauce with Italian Sausage

Posted by Jack McCann | Tags: recipes, sausage

It is so nice to have organic spiced, pasture raised Italian sausage! Here is a great dish that is super easy and any leftovers are even better!

Coconut Chicken Confit Pad Thai

Posted by Jack McCann | Tags: recipes, eggs, chicken, drumsticks, thighs, vegetarian, newsletter

I don't think I would have come up with this recipe -- but it sure is a great way to showcase our slow growth dark meat chicken. Making a coconut poached drumstick really is simple to do and a perfect compliment to Pad Thai. This is a classic in the making.

Roasted Cauliflower With Garlic

Posted by Jack McCann | Tags: sides, recipes, vegan, vegetarian, 05-09-2022

This is fantastic -- a superfood and easy to make. When I first tried making this, I didn't expect much, but it turned out so good that I was glad I made two whole cauliflowers worth!

Beet Chips

Posted by Jack McCann | Tags: recipes, sides, vegetarian, 05-16-2022

Beets are SO good, but they also require planning ahead to roast and use in things... I love having this quick option for a great salty and sweet snack or side dish!

Kale Chips
