This is an easy cooking week as we all prepare for the start of school. In our home, Betsy's gone at band camp all week (and was gone last week as well, so we're all getting tired...) so we're going as simple as possible at home while she eats all the frozen meals we put away earlier in the month. As always, we'll spend some weekend time chopping a bunch of fresh veggies for quick-grab snacks and lunches during the week.
