Cherry Tomato Confit

Roasted, garlicky, simple and versatile!

Put delicious cherry tomatoes to use in this easy, versatile recipe!

The flavor you get from roasting cherry tomatoes together with garlic and olive oil is worth turning your oven on, even in the summer! The olive oil combines with the flavor of the roasted garlic and juice from the tomatoes to create a strong, sweet & roasted tomato flavor.

Make a double batch and freeze to enjoy the flavor of fresh tomatoes even after the season is over.

Customize with more or less garlic and try adding in different fresh herbs like thyme, rosemary or topping with fresh basil!

Ingredients

  • 2 pints cherry tomatoes, stemmed
  • 4 large garlic cloves, smashed and peeled
  • 1/2 cup extra virgin olive oil
  • Pinch crushed pepper flakes (optional)
  • Salt and pepper to taste
  • Herb Options: Rosemary, thyme or basil
    • Rosemary and/or thyme leaves should be removed from the stem and roasted along with the tomatoes
    • Basil leaves are best kept fresh and used for topping the confit as it's being served

Instructions

  1. Preheat oven to 400 degrees
  2. Arrange tomatoes on a large, rimmed baking sheet
  3. Toss with oil, salt, pepper & garlic
  4. Sprinkle with rosemary and/or thyme leaves (if using)
  5. Roast for 30 minutes or until tomatoes are blistered & browning
  6. Let cool, top with fresh basil if desired

Make It A dish!

  • Appetizer: Serve warm and top with fresh burrata cheese alongside crusty bread
  • Pasta Sauce: Toss with cooked pasta and top with basil & parmesan. Try adding a little butter for a richer flavored sauce, or try blending the tomatoes if you prefer a smoother texture
  • Side: Serve alongside grilled fish, shrimp or chicken or any of your other favorite TC Farm meats!
  • Breakfast: Serve with scrambled eggs, an omelette or top your breakfast sandwich with warm tomato confit
  • Pizzas: Try using tomato confit instead of the pizza sauce!
