Velvet Pioppini and Red Sauce

  • 1 lb. Velvet Pioppini mushrooms
  • 1 ½ lb. lean ground beef or turkey
  • 3 15 oz. cans Italian stewed tomatoes
  • 2 Tbsp. olive oil
  • 2 garlic cloves, crushed or minced
  • 1 small yellow onion, chopped
  • 1 Tbsp. oregano
  • 1 Tbsp. basil
  • Salt and pepper to taste
  • 12 oz. cooked spaghetti, or another pasta of your choice
  • Parmesan cheese (optional)


  1. Chop mushrooms into bite-sized pieces.
  2. Sauté mushrooms in olive oil for 5-7 minutes then set aside.
  3. In the same pan, sauté onions for 3-5. Then brown the ground meat and drain off excess liquid.
  4. Add remaining ingredients to the pan and let simmer for about 20-30 minutes.
  5. While the sauce is simmering cook your pasta.
  6. For the last 10 minutes of simmering add the mushrooms into the sauce.
  7. Serve garnished with parmesan cheese.
