Pasta Carbonara with Green Beans

Ingredients

  • 1 lb bacon, coarsely chopped
  • 1 onion, finely chopped
  • 1 lb. spaghetti noodles
  • 1 lb. green beans, chopped into 1-2" lengths
  • 1 clove garlic, minced
  • 3 eggs
  • 1 c. shredded parmesan
  • salt
  • pepper
  • optional: toasted pine nuts

Instructions

  1. Fry in a large, heavy skillet until just crispy. Remove bacon from skillet but keep fat in the skillet.
  2. In the bacon fat and over low heat, caramelize the onions.
  3. Meanwhile, boil water and cook the pasta according to package directions. Add the beans to the pasta water for the last five minutes of the pasta's cooking time. Drain pasta and beans, saving about a cup of the cooking water.
  4. When onions are caramelized, add the garlic and fry for one minute.
  5. Scramble the eggs and parmesan together.
  6. Remove skillet from the heat and add the bacon, pasta/beans, egg mix, and 1/2 c. pasta water to the onions. Stir to combine, adding more pasta water if needed. Season with salt and pepper. If desired, garnish with toasted pine nuts.
