Egg and Tortilla Chip Scramble

  • eggs
  • tortilla chips
  • salt
  • butter or vegetable oil
  • deli meat like bacon or pepperoni (optional)
  • shredded cheese (optional)
  • Herbs or sour cream (optional)


  1. In a bowl, scramble as many eggs as you want to make.
  2. With your hands, crumble one big handful of tortilla chips per egg and stir into eggs. The chips don't have to be crushed super fine but you don't want giant chips in there either.
  3. Sprinkle egg mix with salt and pepper ... use less salt than you usually would for scrambled eggs since the chips have salt already.
  4. If desired, roughly chop bacon, pepperoni, or another deli meat and cook in a hot skillet.
  5. Add butter, vegetable oil, or another fat to a hot skillet (unless it's already full of bacon fat from step 4!). Add the egg mix to the skillet and scramble until cooked through.
  6. If desired, sprinkle cheese over the top when eggs are cooked.
  7. Garnish with fresh herbs or sour cream if desired

We used spruce tips as the garnish - perfect for spring!
