Ham Potato and Broccoli Quiche

So easy to make and tastes so great at any time of the day!

This is a fairly quick and easy meal that works great for breakfast through dinner. A real crowd pleaser, plan on feeding four with this recipe.

Ingredients:

  • 2 medium sized organic yellow potatoes, cut 1/4" slices
  • 2T bacon fat or butter
  • 1 small onion, sliced thin
  • 1-2C broccoli florets
  • 3 TC Farm eggs
  • 1/2 C cream
  • 1t dried sage
  • 1t sea salt
  • 2-3 slices ham, chopped
  • 1/3C kalamata olives or a jar of capers (not shown in video because I didn't have them on hand)
  • 1/2 C shredded cheese


Instructions:

  1. slice potatoes
  2. gently simmer for about 10-13 minutes until tender, but not breaking up
  3. heat oven 375
  4. slice onions and caramelize in bacon fat
  5. when almost done, add broccoli and caramelize a bit
  6. add water and cover to steam broccoli until tender
  7. remove top to allow water to evaporate and remove from heat
  8. whisk eggs, cream, sage and salt
  9. chop ham
  10. add cheese to bottom of the pie pan
  11. add potato on top
  12. add remaining ingredients and top with cheese
  13. bake for about 12 minutes until eggs are set
  14. Allow to cool a bit and top with sea salt as needed
